Boil carrots in water over medium-high heat for 5 minutes and drain.
To the same saucepan, add butter and honey, and stir to combine.
Add drained carrots back to saucepan. Stir to coat in butter and honey mixture until carrots are warm again, about 2 minutes.
Serve with fresh chopped parsley.
