Add all ingredients to an instant pot pressure cooker.
Cook on High pressure for 35 minutes. Allow natural release of the pressure for 15 minutes, then use quick release function.
Internal temperature of ham hock should be 165°F. If not, pressure cook for additional 10 minutes.
Remove ham hock and remove meat from the bone.
Serve hot with ham hock meat on top.
