Preheat the oven to 350° F.
Line a cookie sheet with parchment paper.
Slice croissants in half horizontally.
Flatten two pieces of cookie dough squares and place on the bottom half of croissants, repeat for each croissant. Divide one cookie dough square into two, flatten, and gently press onto tops of croissant, repeat for each croissant.
Gently cover with foil and bake for 10 minutes.
Remove foil and continue to bake for 3 minutes or until tops are brown and internal temperature reaches 165°F.
