A healthy recipe to add to your kid-friendly meal rotation – Turkey Egg Roll Bowls. Enjoy all the great flavor of an egg roll without the fuss and carbs. This quick and easy meal makes a generous one-pot meal that is low carb, paleo, and keto friendly.

Directions

Step 1

Heat skillet with 2 Tbsp Sesame Oil.

Step 2

Sauté onions and mushrooms until onions are translucent (3-5 minutes).

Step 3

Add garlic and sauté 30 seconds.

Step 4

Add ground turkey and cook until lightly browned.

Step 5

Add broth, soy sauce, ginger, salt, pepper, green cabbage, and red cabbage. Stir to combine.

Step 6

Cover and simmer 10 minutes, cabbage will begin to wilt.

Step 7

Add carrots and cook additional 5 minutes.

Step 8

Optional: Add additional shredded cabbage to add crispness to final dish.

Step 9

Serve over prepared cauliflower rice.

Step 10

Top with Jammy eggs (if desired) soy sauce, green onions, sesame seeds, and sweet chili sauce or sriracha, as desired.

Cook's Notes

Instead of cauliflower rice, you can also serve with rice or quinoa. To make it more keto-friendly, remove the carrots and add more cabbage. If you don't want leftover cabbage, choose just one (green or purple), or use a cole slaw mix. You can serve this recipe with Jammy Eggs. To prepare Jammy Eggs: 1. Bring a large saucepan of water to a boil over medium-high heat 2. Carefully lower eggs with a slotted spoon in the boiling water. 3. Boil for 6 to 7 minutes, then immediately transfer to an ice bath. 4. Let chill for 2 minutes. 5. Gently crack eggs, peel, and slice 6. Store in airtight container for up to 3 days.
