Delicious, deconstructed, goodness! This healthy Deconstructed Apple Cranberry Pecan Salad is served in a lettuce “cup”. Light and refreshing with an amazing creamy Balsamic Vinaigrette Dressing, this flavorful recipe makes a quick, easy, and nutritious “non-boring” lunch or side dish.

Step 1

Combine apples, pecans, dried fruit & nut mix, and feta cheese.

Step 2

In a small bowl, whisk together yogurt and balsamic vinaigrette dressing until smooth.

Step 3

Pour dressing mixture over fruit mixture, toss to combine.

Step 4

Fill lettuce with the apple pecan salad mixture.

Cook's Notes

Serve this deconstructed salad in lettuce “cups” of your choice. We use romaine lettuce but iceberg and leaf lettuce works well too. You can also serve over a bed of lettuce for a traditional salad.
