Step 1

Cook bacon until crisp, set aside to cool. Crumble into bite-size pieces.

Step 2

Meanwhile, heat the milk in a saucepan over medium heat. Bring to a simmer, stirring frequently, and remove from heat. Add the melted butter, salt and pepper, and whisk to combine. Pour into a large mixing bowl.

Step 3

Add the potato flakes to the milk mixture and stir until combined. Allow to sit for 5 minutes.

Step 4

Add the sour cream to the potatoes and mix until evenly combined. Add the cheddar cheese, bacon, and 2.5 Tbsp green onions, and mix together. Transfer to a serving bowl and garnish with the remaining green onions.

Cook's Notes

To save more time, use precooked bacon for this recipe.
