This recipe elevates traditional mashed potatoes with the savory sweetness of caramelized onions and the rich, nutty flavor of gouda cheese blended into buttery golden potatoes. Finished with a garnish of fresh parsley, this dish offers a comforting and gourmet accompaniment to any meal.

Step 1

Over medium heat, melt 2 Tbsp butter. Add onion, pepper & salt to taste, and sugar. Cook 15-25 minutes, stirring occasionally until onions are carmelized.

Step 2

While onions are cooking, prepare mashed potatoes. You may peel or leave skins on the Yukon gold potatoes. Add cubed potatoes into a pot, add water to cover, 2 tsp salt, and bring to a boil. Cook for 20 minutes or until potatoes are tender. Drain.

Step 3

Mash drained potatoes with a potato masher. Add warm milk, 5 Tbsp melted butter, 1 tsp salt, and 1/2 tsp pepper. Blend using a hand mixer.

Step 4

Stir in caramelized onions and 1 cup of gouda cheese. Garnish with chopped parsley.
