Failproof Slow Cooker Corned Beef with Cabbage

This is the easiest and most failproof way to make Corned Beef with Cabbage. The beef is tender and delicious. This recipe is quick and easy to prepare, chop the vegetables and place everything in your slow cooker. Prepare it in the morning and enjoy it for dinner that evening. This recipe is festive for a St. Patrick’s Day feast but enjoyed as a hearty Irish meal any time of year.

Directions

Step 1

Rinse Corned Beef Flat with water and pat dry.

Step 2

Make several ¼ inch deep cuts in both sides of the brisket.

Step 3

Add oil in 12-inch cast iron skillet or grill pan, heat over medium. Add Corned Beef Flat to skillet and cook until browned, about 3-5 minutes per side. Set aside.

Step 4

Add onion slices to skillet and cook until browned over medium heat, about 5 minutes.

Step 5

Place potatoes, carrots, and garlic in bottom of 6-quart slow cooker.

Step 6

Place Corned Beef Flat in crock pot over vegetables.

Step 7

Pour Beef Broth into crock pot.

Step 8

Rub brisket with salt and pepper.

Step 9

Add browned onions on top of Corned Beef Flat.

Step 10

Cover with lid and cook over low heat for 9-10 hours, until fork tender and internal temperature reaches 145°F

Step 11

Add cabbage wedges and cook an additional 1 hour or until cabbage is tender.

Step 12

Place Corned Beef on cutting board, let stand for 15 minutes.

Step 13

Strain and reserve 1-1/2 cups cooking juices from crock pot.

Step 14

To make optional horseradish sauce, stir together reserved cooking juices from pot, cider vinegar, flour, sugar, and horseradish.

Step 15

Cut Corned Beef against the grain into slices, in your preference of thick or thin.

Step 16

Serve Corned Beef with vegetables. Top with Horseradish Sauce, if desired.

Cook's Notes

This is a fuss-free method of preparing a traditional Irish meal. The meat and vegetables are cooked to perfection. Do not overcook as Corned Beef can become chewy if cooked too long. This recipe is also good for gluten-free and dairy-free diets. This Horseradish sauce is light and mild in flavor, not too spicy. If you prefer a spicier sauce, add more horseradish to this recipe. Drizzle this sauce over the corned beef and/or vegetables, as desired. If you prepare the horseradish sauce, it is not gluten-free as written above. Substitute the flour with a gluten-free flour, if needed.
