Our Blue Corn Tortilla Crusted Salmon has a distinctly salty corn flavor and crisp texture topping the salmon.



Step 1

Preheat oven to 400°F.

Step 2

Place salmon on a parchment-lined baking pan sprayed with cooking spray; press chips onto salmon and spray with cooking spray. Bake salmon 15 minutes or until internal temperature reaches 145°F.

Step 3

Stir mango and salsa in a bowl; serve over salmon.

Step 4

Garnish with sliced green onions and lime wedges, if desired.
